Bread

We will be stocking fresh bread made at the Redbournbury Watermill between Redbourn and St Albans. The wheat is grown on fields adjacent to the watermill and then milled into flour and baked into bread on site, meaning that the total food miles for this product is around 19, between St Albans and Leighton Buzzard!

The flour is all organic, but currently the flour is not baked using entirely organic ingredients (and is sold as such). However, these are early days in the bakery operation and as output is increased and costs can be kept down via the higher production they will be able to convert to entirely organic ingredients and gain the full certification. The watermill is required to certify separately with the Soil Association for its flour milling and baking operations, which places a high burden on a small local business. We choose to support the company for both their bread and flour thanks to the low food miles and generally admirable standards.
