Food:

Redbournbury Watermill produce all of our Flour and Bread products using wheat grown next to the Watermills estate between Redbourn and St Albans. The bakery is also based on site, so the total food miles during production is about 1, then the produce is transported 18 miles to Leighton Buzzard, a total of 19! The flour is all organic, but currently the flour is not baked using entirely organic ingredients (and is sold as such). However, these are early days in the bakeries operation and as output is increased and costs can be kept down via the higher production they will be able to convert to entirely organic ingredients and gain the full certification. The watermill is required to certify separately with the Soil Association for its flour milling and baking operations, which places a high burden on a small local business. We choose to support the company for both their bread and flour thanks to the low food miles and generally admirible standards.
